I edited All Open Cases in Lightning Experience to display Case Owner but that does not even show as an option in fields to select. I switched over to classic view and added it to the fields selected for list view and then viewed it in Lightning Experience but the field still does not show in the list. The only owner information I was able to show on the list was Owner Alias. Is this a limitation in lightning or am I missing something?

I too could not get the Case Owner Name to populate in a related list on a custom object. I opted to use the Case Owner Alias instead of creating a new formula field. This looks like a bug to me. I get no errors or warnings. Both Case Owner Name and Case Owner Alias are on the related list, only the Case Owner Alias is appearing.
