I am trying to create a trial or for a client on ENTERPRISE edition.
I have the following link to the trial form for enterprise, however this always seems to create a professional edition org.

Does anyone know why this is the case and if there is a newer/different way to create an ENTERPRISE trial.

Can confirm this is still an issue - all trial orgs I have attempted (Regardless of "Edition" selected on Salesforce.com) are defaulting to Professional Edition
The link https://www.salesforce.com/form/signup/freetrial-ee-lb.jsp (with "ee" or "ue" doesn't seem to have any effect) It would appear they have removed the ability to register for EE or above trial orgs.
Edit. It seems that as of '20, You MUST contact your "Sales Representative" from Salesforce (technical support will just send you their number: 1-800-667-6389) Ask for the name of your account representative if you don't know it already (if you do call them directly- Sales support "front-line" representatives cannot help you).
It seems like it's creating a Professional edition as I tried today.

We probably may need to create a Case to convert it to Enterprise if needed.

Recently salesforce collate all the free trail org (Product Trials & Industry-Based Trials) in single page, and worth to check here - https://developer.salesforce.com/free-trials
Sign up for a service cloud trial org. By default, they are Enterprise edition.
EDIT: for 2023 onward, and may change in the future.
Can confirm this is still an issue - all trial orgs I have attempted (Regardless of "Edition" selected on Salesforce.com) are defaulting to Professional Edition. That clearly conflicts with what you're saying. It is possible that Salesforce has changed this since mid 2020, but seeing some documentation of that would make your answer more credible (because right now it's your word vs someone else's, and they've made a lot more contributions here, which makes me more likely to trust them over you). Being detailed and specific is important here.
